Healthy Baked Chicken Nuggets Recipe
Confession: I love chicken nuggets. And I eat them a lot. I guess I never fully graduated past the palate of a 6 year-old. When I need something quick, I heat up some Applegate Organic Gluten-Free Chicken Nuggets. But when I have the time, I love to make my own with all kinds of good-for-you goodness.
Yes, chicken nuggets can be good for you. Here's how.

Ingredients:
3 organic boneless, skinless chicken breasts
4 eggs
1 cup rolled oats
1/2 cup whole wheat flour
1/2 cup almond flour
1/4 cup ground flax seed
1/4 cup nutritional yeast
1 tablespoon rosemary
1 tablespoon basil
1/2 tablespoon oregano
1/2 tablespoon sea salt
1/2 tablespoon sage
1/4 tablespoon ground mustard seed
1/4 tablespoon onion powder
1/8 tablespoon black pepper
1/8 tablespoon paprika
1 teaspoon ground fennel (optional)
Pinch of cayenne pepper
1 tablespoon Earth Balance organic buttery spread for greasing the pan (or regular butter or canola oil if you prefer)
Instructions:
1. Preheat oven to 350° F
2. Grease a large pan with your choice of butter or oil
3. Cut chicken breast into approximately 1x1 inch cubed pieces
4. Crack four eggs into a bowl and whisk until blended
5. In a food processor, add the oats and blend into a fine powder
6. Add the rest of the dry ingredients (including spices) and blend until mixed
7. Pour blended dry ingredients into a large bowl
8. Dip about 6 pieces of chicken at a time into the eggs and then into the dry ingredient bowl, covering them completely
9. Place chicken nuggets on the pan, making sure to leave a small space between each
10. Repeat until all chicken nuggets are covered with egg and dry ingredients and on the pan
11. Place pan into the oven and heat for 20-25 minutes
12. Remove the pan from the oven and flip each nugget over to allow it to cook on both sides
13. Cook for another 5 minutes
14. Cut one nugget open, ensuring that it's cooked all the way through
15. Serve!
